Caramel Shortbread we are going to make these soon!!

March 26, 2012 by Little Leo's Mom

Caramel Shortbread we are going to make these soon!!  We will add videos and pictures once we do!!

Caramel Shortbread

Caramel shortbread is a deliciously naughty little snack packed full of evil calories! Eat in moderation.

Ingredients

For the shortbread

250 g (9 oz) plain flour

175 g (6 oz) butter or margarine

75 g (2½ oz) caster sugar (or ordinary sugar)

For the caramel

400 g (14 oz) tin of condensed milk

150 g (5 oz) butter or margarine

150 g (5 oz) brown or white sugar

For the chocolate topping

200 g (7 oz) milk or plain chocolate.

Method

1 Prepare the shortbread base by mixing the flour and sugar in a bowl, then rubbing in the butter to produce a smooth paste-like dough.
2 Press the dough into an 8″x8″ (20cmx20cm) baking tin, or a Swiss Roll tin and smooth the surface with the back of a spoon.
3 Prick the dough with a fork and bake at 180°C for 20 minutes. Leave to cool in the tin.
4 Prepare the caramel by melting the butter gently in a pan. Add the sugar and stir until a “sludge” is formed.
5 Remove from the heat and stir in the condensed milk. Bring back to the boil and simmer gently with constant stirring for 8-10 minutes.
6 Pour the hot caramel onto the shortbread base, spread it out evenly then leave to cool completely.
7 Melt the chocolate in a glass bowl over a pan or boiling water. Pour onto the caramel and spread evenly. Place in the ‘fridge to harden the chocolate then cut into squares.

Veggie Pizza + Cheese!

March 26, 2012 by Little Leo's Mom

My son really hates vegetables so I do my best to make him eat them or drink them.  So I used baby food, veggies and I got carrots and seasoned it up with pizza seasonings and garlic powder.  I did drop in 2 tiny drops of red food coloring though because the carrots were just an off orange color.  I also made a store bought powder crust and used mixed veggies in there.  Topped with some mozzarella and he loved it!!!  I told him what I had done and now he said he wants to eat it for breakfast, lunch and dinner cause it was soooo good lmao he kills me!!

The start of our Garden.

February 2, 2012 by Little Leo's Mom

We are planting lots of things in our little garden.

We laid this big piece of plastic down and we planted 12 different kinds of seeds, cherry tomatoes, beef steak tomatoes, rutgers tomatoes, peppers, green peppers, banana peppers, hungarian something peppers, eggplant, swiss chard, peas, green onions and radishes. He enjoyed it. We both planted 6 little trays of each seed.

Last night Leo took his third Reggies Reading Quiz and did a Great Job!! He is so good at these learning games.  I’m so proud of him.  He also loves that I can post on his website what he does.

Leo has made good progress in Reading Eggs. Leo has finished another ten lessons.

Leo has just completed the Zoo 3 Quiz at the end of Map 3.

Leo passed the quiz, earning a Silver certificate. To see and print out this certificate go to your child’s My Stuff page and click on Certificates.

In this set of ten lessons, your child learnt the following words, sounds and skills.

Map Information : Level 1 Map 3 Lessons 21 – 30

Letters and sounds – v, d, j, o, q, ad

Words learnt – and, is, in, had, on, band, sand, dad, sad, bad, mad, ant, good

Sample of sentences read – Sam is a good ant. See the band. Can the rat see the cat?.

The Reading Eggs lessons are designed to be played more than once. All children benefit from repeating lessons as it reinforces learning and builds automaticity(instant recall). We recommend that young learners repeat each lesson at least three times formaximum benefit.
