Daddy took Leo to BK

April 10, 2012 by Little Leo's Mom

I dont like to let my sweetie eat fast food its horrible for you but on the occasion and I mean maybe 10 times in a year.  If we do go get burgers we go to a burger place called best burger usually.  It reminds me of a restaurant my grandma, aunt wendy, aunt amy, and myself worked at. I actually got meat which was beef from packages and use a ice cream scoop to make balls to fill the drawer for the day.  I cut onions, tomatoes, and numerous other things as well as cooked.  When someone wanted a bigger sized burger we just took two balls of beef and put em together and mush them on the grill with onions on top of them.  Flip’em and then serve em with a small amount of mayo, ketchup, mustard and pickle.  They did have the onions on them that grilled with the burgers.  That is what best burger is like!  They just do not use the onion but they do use the pickle ketchup and mustard, we ask for mayo on side so we can put a little bit on there.

LOL he said he wanted to get that area back there but I think he took a picture of the girl

Chocolate Banana Pancakes

April 8, 2012 by Little Leo's Mom

I didnt give the best description with pictures of my pancakes so I’ll tell ya what I did.  Most the time I dont really measure anything I just go with it!  I poured some pancake mix in the measuring cup and then added a little bit of bakers cocoa, my favorite its toll house, then hersheys.  Add water and mix to the consistency that you like.  I poured the pancake batter in to the buttered pan and then placed sliced pieces of banana on top the pancake and then used a spoon with a little more batter and covered up each one with out adding to much extra batter.  Flip’em for a minute then place on plate and eat!! :)~ the boys loved them!  (daddy and leo)

Dinner was yummy Leo ate the carrots all up!

April 4, 2012 by Little Leo's Mom

Sometimes its very hard to get Leo to try veggies and so I got slick on him lol!  So I took some fresh carrots and a couple tablespoons of  Truvia 0 calorie, 0 fat, and some cinnamon with all spice and let the carrots cook down.  All the sudden he started saying what smells so good like pumpkin pie.  I liked to died laughing cause it was so far from pumpkin pie, well kinda lol.  He ate all of them, even what was left over after every one had some, which I had no problem there! I made meatloaf, mashed potatoes, took the very little grease from the meatloaf to make a gravy and then the carrots.  Dinner was Delicious!!

Dough
1 egg
1/3 to 1/2 cup water
2 cups flour
1/4 tsp salt
mix flour and salt, in a big bowl and mix water and egg in a small bowl, beat good. Make well in flour and pour in egg, water mixture and start mixing add water teaspoon by teaspoon until you have a good pliable dough. Knead dough on floured surface until it is elastic like and kinda stretches back. Roll as thin as you like I rolled as thin as I could! You can fill them with any thing you want! wet edges and stick together, you can do anything you want like fry, steam, boil they are super yummy!

I used a ground turkey, garlic, ginger, red pepper seeds, salt, pepper, soy sauce and some other stuff. I filled the wonton wrappers with it.

March 26, 2012 by Little Leo's Mom

Caramel Shortbread we are going to make these soon!!  We will add videos and pictures once we do!!

Caramel Shortbread

Caramel shortbread is a deliciously naughty little snack packed full of evil calories! Eat in moderation.

Ingredients

For the shortbread

250 g (9 oz) plain flour

175 g (6 oz) butter or margarine

75 g (2½ oz) caster sugar (or ordinary sugar)

For the caramel

400 g (14 oz) tin of condensed milk

150 g (5 oz) butter or margarine

150 g (5 oz) brown or white sugar

For the chocolate topping

200 g (7 oz) milk or plain chocolate.

Method

1 Prepare the shortbread base by mixing the flour and sugar in a bowl, then rubbing in the butter to produce a smooth paste-like dough.
2 Press the dough into an 8″x8″ (20cmx20cm) baking tin, or a Swiss Roll tin and smooth the surface with the back of a spoon.
3 Prick the dough with a fork and bake at 180°C for 20 minutes. Leave to cool in the tin.
4 Prepare the caramel by melting the butter gently in a pan. Add the sugar and stir until a “sludge” is formed.
5 Remove from the heat and stir in the condensed milk. Bring back to the boil and simmer gently with constant stirring for 8-10 minutes.
6 Pour the hot caramel onto the shortbread base, spread it out evenly then leave to cool completely.
7 Melt the chocolate in a glass bowl over a pan or boiling water. Pour onto the caramel and spread evenly. Place in the ‘fridge to harden the chocolate then cut into squares.

Veggie Pizza + Cheese!

March 26, 2012 by Little Leo's Mom

My son really hates vegetables so I do my best to make him eat them or drink them.  So I used baby food, veggies and I got carrots and seasoned it up with pizza seasonings and garlic powder.  I did drop in 2 tiny drops of red food coloring though because the carrots were just an off orange color.  I also made a store bought powder crust and used mixed veggies in there.  Topped with some mozzarella and he loved it!!!  I told him what I had done and now he said he wants to eat it for breakfast, lunch and dinner cause it was soooo good lmao he kills me!!

We made Caramel Swiss Roll (1st time for this one to)

March 26, 2012 by Little Leo's Mom

This was so good

Cake was super simple beat 4 eggs and 6oz of sugar until mousse like, then sift in 6oz of flour and bake for about 15 – 20 min on 300 degrees in a swiss roll type pan not sure of its size but its not very deep. I used a caramel to spread inside it was sweetened condensed milk, butter and 1/2 cup of sugar. Melt butter in pan mix in sugar and stir until sludgy like, add sweetened condensed milk and stir constantly on a medium heat or so a low boil or simmer like heat. until color changes and its thickened. I did spread it directly on the cake while hot and rolled it up boom it was great! Sprinkled powder sugar and drizzled caramel over the top!
